- 1 bag (32 oz) frozen tater tots
- 1 cup shredded cheddar cheese
- 1 cup cooked ground beef or turkey
- 1/2 cup black beans, rinsed and drained
- 1/4 cup sliced jalapeños
- 1/2 cup diced tomatoes
- 1/4 cup chopped green onions
- 1/2 cup sour cream
- 1/4 cup guacamole
- Salt and pepper to taste
Feel free to substitute ground beef with turkey for a leaner option or skip the meat for a vegetarian twist by adding more beans and veggies.
Instructions
- Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
- Spread the frozen tater tots in a single layer on the prepared baking sheet. Bake for 25-30 minutes, or until golden brown and crispy.
- Meanwhile, cook the ground beef in a skillet over medium heat until browned. Season with salt and pepper, and set aside.
- Once the tater tots are done, remove them from the oven and sprinkle the shredded cheddar cheese evenly over the top.
- Layer the cooked ground beef, black beans, jalapeños, and diced tomatoes over the cheese-covered tots.
- Return the baking sheet to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.
- Remove from oven and top with chopped green onions, dollops of sour cream, and guacamole before serving.
