Tropical Bliss: Mango Shrimp Salad with Zesty Lime Dressing

Learn how to make delicious Mango Shrimp Salad with Lime Dressing. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

Let’s talk ingredients. You won’t find anything here that you can’t pronounce or that requires a special trip to a gourmet store. Here’s what you’ll need:

  • 1 pound large shrimp, peeled and deveined
  • 2 ripe mangoes, peeled, pitted, and diced
  • 1 red bell pepper, diced
  • 1/2 red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 4 cups mixed salad greens
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup lime juice (about 2 limes)
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • Salt and pepper to taste
  • Optional: 1 jalapeño, sliced for a little heat

If you’re out of mangoes, peaches or pineapples are great substitutes. And for a milder version, skip the jalapeño.

Instructions

  1. Start by heating a tablespoon of olive oil in a skillet over medium heat. Add the shrimp, season with salt and pepper, and cook until pink and opaque, about 2-3 minutes per side. Set aside to cool.
  2. In a large salad bowl, combine the diced mangoes, red bell pepper, red onion, cherry tomatoes, and avocado.
  3. In a small bowl, whisk together the lime juice, remaining olive oil, honey, salt, and pepper. This dressing is the heart of our salad—zesty and full of life, much like my mom’s impromptu tomato sauce magic.
  4. Arrange the mixed salad greens on a serving platter or individual plates. Spoon the mango mixture over the greens.
  5. Top with the cooked shrimp and drizzle with the lime dressing. Sprinkle fresh cilantro on top, and if you’re feeling adventurous, add those jalapeño slices for a kick.
  6. Toss gently to combine, making sure every ingredient is coated in that lovely lime dressing.

And there you have it—a salad that’s as easy as it is enchanting. Perfectly imperfect, just like home cooking should be.
