- 1 pound of carrots, peeled and cut into sticks
- 2 tablespoons olive oil
- 2 tablespoons pure maple syrup
- 1 tablespoon Dijon mustard
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 tablespoon fresh parsley, chopped (optional for garnish)
Feel free to swap out the dried thyme for rosemary if that’s what you’ve got on hand. And if you can’t find fresh parsley, don’t fret—the dish stands well without it!
Instructions
- Preheat your oven to 400°F and line a baking sheet with parchment paper for easy cleanup.
- In a large mixing bowl, whisk together the olive oil, maple syrup, Dijon mustard, salt, pepper, and thyme until well combined.
- Add the carrot sticks to the bowl and toss them until they are well coated with the maple Dijon mixture. This is the part where my kids love to help—it’s messy and fun!
- Spread the carrots in a single layer on the prepared baking sheet. Ensure they aren’t crowded, or they’ll steam instead of roast.
- Roast in the preheated oven for 25-30 minutes, or until the carrots are tender and have caramelized edges. You’ll want to give them a gentle stir halfway through cooking to ensure even roasting.
- Once done, remove from the oven and let them cool slightly before serving. Sprinkle with fresh parsley if desired.
