Feel free to swap out the dried thyme for rosemary if that’s what you’ve got on hand. And if you can’t find fresh parsley, don’t fret—the dish stands well without it!

Instructions

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper for easy cleanup.
  2. In a large mixing bowl, whisk together the olive oil, maple syrup, Dijon mustard, salt, pepper, and thyme until well combined.
  3. Add the carrot sticks to the bowl and toss them until they are well coated with the maple Dijon mixture. This is the part where my kids love to help—it’s messy and fun!
  4. Spread the carrots in a single layer on the prepared baking sheet. Ensure they aren’t crowded, or they’ll steam instead of roast.
