- 2 cups leftover mashed potatoes (or freshly made if you prefer)
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 2 large eggs
- 1/2 cup all-purpose flour
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon chopped fresh chives (optional for garnish)
If you’re out of cheddar, feel free to substitute it with mozzarella or any cheese you adore. The beauty of home cooking is in its adaptability, just like how my mom could always whip up something amazing from whatever was in the pantry!
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine mashed potatoes, cheddar cheese, Parmesan cheese, eggs, flour, garlic powder, and onion powder. Mix until well combined. Season with salt and pepper.
- Scoop the mixture into small balls using a tablespoon and place them onto the prepared baking sheet, leaving some space between each puff.
- Bake in the preheated oven for 15-20 minutes, or until the puffs are golden brown and crispy on the outside.
- Remove from the oven and let them cool slightly before serving. Sprinkle with chopped chives for a pop of color and extra flavor if desired.
Tip: If the mixture feels too sticky, add a bit more flour. Remember, the goal is to enjoy the process, even if your kitchen gets a little messy along the way!
