- 1 cup fresh spinach, finely chopped (you can also use frozen spinach, just thaw and squeeze out excess water)
- 1 cup crumbled feta cheese (use a good quality feta for best flavor; goat cheese can be a nice substitute)
- 1/2 cup all-purpose flour (whole wheat flour works if you want a nuttier taste)
- 1/4 cup grated Parmesan cheese (optional but adds a lovely sharpness)
- 1 large egg, lightly beaten
- 1 garlic clove, minced (or 1/2 teaspoon garlic powder if you’re in a hurry)
- 1/2 teaspoon dried oregano (or Italian seasoning mix for a more herbal profile)
- 1/4 teaspoon freshly ground black pepper
- Pinch of salt (keep in mind feta is salty, so go easy)
- Olive oil spray or a little oil for brushing the baking sheet
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease it with olive oil. This helps the crisps come off easily and keeps the cleanup painless.
- In a medium bowl, combine the chopped spinach, crumbled feta, grated Parmesan, and flour. Mix them gently so everything is evenly distributed. I often sneak a little extra Parmesan in because, well, cheese makes everything better.
- Add the beaten egg, minced garlic, oregano, black pepper, and a small pinch of salt. Stir until all ingredients come together into a slightly sticky dough. If it feels too wet, sprinkle in a bit more flour, but be careful not to overdo it or the crisps will dry out.
- Using a teaspoon or small cookie scoop, drop small mounds of the mixture onto your prepared baking sheet. Flatten them slightly with the back of the spoon to about 2 inches in diameter. Don’t crowd them too closely—they’ll spread a bit as they bake.
- Bake for 12-15 minutes or until the edges turn golden brown and the crisps feel firm to the touch. I like to peek around the 10-minute mark because ovens vary, and I don’t want those crisps to go from perfectly crisp to burnt!
- Remove from the oven and let them cool on the baking sheet for 5 minutes. They’ll crisp up even more as they cool, so resist the urge to dig in right away—even though I know how tempting that is!
