- 4 (6-ounce) white fish fillets (like cod, halibut, or tilapia)
- 2 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh parsley, chopped
- 1 lemon, sliced (for garnish)
- Cherry tomatoes (optional, for roasting alongside)
Don’t have fresh herbs? No problem! You can substitute dried herbs, but I find that fresh really elevates the dish. And if you’re not a huge fan of fish, you could easily switch it up with chicken or tofu—just adjust the cooking time accordingly.
Instructions
- Preheat your oven to 400°F (200°C). This ensures the fish cooks evenly and gets that lovely flaky texture.
- In a small bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper. This fragrant mixture is going to be your marinade.
- Place the fish fillets on a lined baking sheet. I love using parchment paper for easy cleanup—less scrubbing later!
- Brush the fillets generously with the herb marinade. Make sure each piece is coated well; this really helps infuse the flavors.
- If you’re adding cherry tomatoes, toss them around the fish on the baking sheet. They’ll roast beautifully alongside the fish!
- Bake in the preheated oven for about 15-20 minutes, or until the fish flakes easily with a fork. The internal temperature should reach 145°F (63°C).
- Once done, remove from the oven, and garnish with freshly chopped parsley and lemon slices. This adds a pop of color and freshness!
As you cook, remember that cooking is about feeling it out. Don’t stress if your fish doesn’t look exactly like the picture in a magazine. As my dad used to say, it’s the taste that counts, and trust me, this will taste amazing!
