- 4 boneless, skinless chicken breasts

- Heat the olive oil in a large skillet over medium heat. Season the chicken breasts with chili powder, cumin, garlic powder, onion powder, salt, and pepper.
- Add the chicken breasts to the skillet and cook for about 6-7 minutes on each side, or until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the chicken broth and bring it to a simmer. Scrape up any browned bits from the bottom of the pan to add extra flavor to your sauce.
- Reduce the heat to low and stir in the heavy cream. Gradually add the shredded cheddar cheese, stirring continuously until the sauce is smooth and creamy.
- Add the diced tomatoes to the sauce and stir to combine. Return the chicken to the skillet, spooning the cheese sauce over the top to coat.
- Cover the skillet and let it simmer for another 5 minutes to let the flavors meld together. Sprinkle with chopped cilantro if desired before serving.
