Ingredients
Scale
To create this vibrant dish, you’ll need the following ingredients. Remember, substitutions are always welcome in my kitchen!
- 1 pound large shrimp, peeled and deveined
- 1 cup tomato juice (substitute with V8 for extra flavor)
- 1/2 cup ketchup
- 1/4 cup fresh lime juice
- 1 tablespoon hot sauce (adjust to taste)
- 1/2 cup diced red onion
- 1/2 cup chopped cilantro
- 1 cup diced cucumber
- 1 cup diced avocado
- 1 cup diced tomatoes
- Salt and pepper to taste
- Tortilla chips for serving
Instructions
Follow these simple steps, and you’ll have a dish that captures the heart of home cooking—easy, delicious, and filled with love.
- Start by boiling the shrimp in salted water until they turn pink and opaque, about 2-3 minutes. Drain and transfer them into an ice bath to cool quickly.
- In a large bowl, combine the tomato juice, ketchup, lime juice, and hot sauce. Stir until well mixed.
- Add the cooled shrimp, onions, cilantro, cucumber, avocado, and tomatoes to the bowl. Stir gently to combine, ensuring the shrimp and veggies are well-coated with the sauce.
- Season the mixture with salt and pepper to taste. I usually do a little taste test here—it’s one of my favorite parts!
- Refrigerate the cocktail for at least 30 minutes to let the flavors meld together. This is a great time to tackle those messy counters, reminiscent of my childhood kitchen chaos.
- Serve the cocktail chilled, alongside a bowl of crunchy tortilla chips for scooping.
