  • 4 large russet potatoes
  • 2 tablespoons vegetable oil
  • 1 teaspoon sea salt

Instructions

  1. Start by preheating your grill to medium-high heat. While it’s heating up, marinate your meats. In a small bowl, mix olive oil, paprika, garlic powder, salt, and pepper. Rub this mixture all over the chicken thighs and beef.
  2. Next, prepare the fries. Peel and cut the potatoes into sticks. Soak them in cold water for about 30 minutes to remove excess starch—this is my mom’s trick for extra crispy fries.
  3. Drain and pat the potatoes dry. Toss them with vegetable oil and sea salt, then spread them out on a baking sheet lined with parchment paper. Bake at 425°F for 25-30 minutes, turning halfway through, until they’re golden and crisp.
  4. While the fries are baking, place the marinated meats on the grill. Cook the chicken for about 6-7 minutes per side, the beef to your preferred doneness, and the sausages until they’re cooked through and slightly charred.
  5. Let the meats rest for a few minutes after grilling to keep them juicy. Slice the chicken and beef before arranging them on a platter with the sausages.
  6. Serve the meats alongside the crispy fries, and don’t forget the dipping sauces. I love a good garlic aioli for the fries, but my kids are all about the classic ketchup.
