- 1 pound spaghetti
- 1 pound boneless, skinless chicken breasts, cubed
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (14.5 oz) diced tomatoes, drained
- 1 cup chicken broth
- 1 cup heavy cream
- 2 cups Monterey Jack cheese, shredded
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- Bring a large pot of salted water to a boil and cook the spaghetti according to package directions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the chicken, season with salt and pepper, and cook until golden brown, about 5-7 minutes. Remove the chicken and set aside.
- In the same skillet, add the diced onion, garlic, and bell pepper, cooking until softened, about 3-4 minutes.
- Stir in the drained tomatoes, chicken broth, and heavy cream. Let it simmer for about 5 minutes until slightly thickened.
- Return the chicken to the skillet, then add the cooked spaghetti and half of the shredded Monterey Jack cheese. Stir until everything is well combined and the cheese is melted.
- Top with the remaining cheese, cover, and let it melt completely before serving.
- Garnish with freshly chopped parsley and serve hot. Enjoy the delightful medley of flavors!
