Here’s a list of everything you’ll need to bring this comforting dish to life. Feel free to make substitutions based on what you have on hand:
- 12 ounces penne pasta
- 2 tablespoons olive oil
- 1 pound chicken breast, cut into bite-sized pieces
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 8 ounces mushrooms, sliced
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream (or substitute with half-and-half for a lighter version)
- 1/2 cup grated Parmesan cheese
- 1 tablespoon chopped fresh parsley, for garnish
Instructions
- Start by cooking the penne pasta according to the package instructions. Once cooked, drain and set aside.
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces, season with garlic powder, salt, and pepper, and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the sliced mushrooms and asparagus. Sauté until the mushrooms are tender and the asparagus is bright green, about 5 minutes.
- Add the minced garlic to the skillet and sauté for another minute until fragrant.
- Pour in the chicken broth and cream, stirring to combine. Bring to a simmer and let it cook for 3-4 minutes until slightly thickened.
- Return the cooked chicken to the skillet, then add the drained pasta. Toss everything together until well coated in the sauce.
- Stir in the Parmesan cheese, allowing it to melt into the sauce. Taste and adjust the seasoning if necessary.
- Garnish with fresh parsley before serving.
