Ingredients
Scale
Gather these simple ingredients to whip up a meal that’s as delightful as it is easy:
- 12 ounces penne pasta
- 2 tablespoons olive oil
- 1 pound chicken breast, cut into bite-sized pieces
- 2 cups sliced mushrooms (button or cremini work well)
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- 1 teaspoon Italian seasoning
- Optional: red pepper flakes for a bit of heat
Feel free to swap out the chicken for tofu or shrimp if you’re looking for a vegetarian or pescatarian twist, and if asparagus isn’t in season, broccoli makes a great substitute.
Instructions
Let’s get cooking! Here’s how to bring this delicious dish to life:
- Start by cooking the penne pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium-high heat. Add the chicken pieces and season with salt and pepper. Cook until golden and cooked through, about 5-7 minutes, then remove from the skillet and set aside.
- In the same skillet, add mushrooms and cook until they start to brown, about 4 minutes. Stir in the asparagus and garlic, cooking until the asparagus is tender but still crisp, about another 3-4 minutes.
- Reduce the heat to medium and add the heavy cream to the skillet. Stir in the Parmesan cheese and Italian seasoning. Let it simmer until the sauce begins to thicken, about 3 minutes.
- Return the chicken to the skillet, along with the cooked penne. Toss everything together until the pasta is well-coated with the creamy sauce. Taste and adjust seasoning if needed.
- If you like a bit of spice, sprinkle in some red pepper flakes just before serving.
