  • 2 cups fresh or frozen blueberries
  • Extra blueberries and lemon slices for garnish (optional)

Feel free to substitute the graham cracker crumbs with crushed cookies or digestive biscuits if you want to mix things up! And if you’re in need of a dairy-free option, using coconut cream instead of heavy cream can give you a beautifully rich texture.

Instructions

  1. Start by preparing your crust. In a medium bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are evenly coated.
  2. Press the mixture into the bottom of a 9-inch springform pan, creating an even layer. Set it in the fridge to chill while you prepare the filling.
  3. In a large mixing bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and vanilla extract while continuing to whip until stiff peaks form. This is one of my favorite steps because the cream gets so fluffy and light!
  4. In another bowl, beat the softened cream cheese until smooth. Add in the lemon zest and lemon juice, mixing well until fully incorporated.
  5. Gently fold the whipped cream into the lemon cream cheese mixture. Be careful not to deflate the whipped cream; you want to keep that airy texture!
  6. Once combined, gently fold in the blueberries, reserving a handful for topping.
  7. Pour the filling over the chilled crust and smooth out the top with a spatula. Cover the pan with plastic wrap and refrigerate for at least 4 hours, or overnight if you can wait!
  8. When ready to serve, carefully remove the sides of the springform pan. Top with the reserved blueberries and lemon slices for a beautiful presentation. Trust me, your guests will be impressed!
