- 1 lb flank steak, sliced thinly
- 1 cup orzo pasta
- 2 cups beef broth
- 1 cup cherry tomatoes, halved
- 1 bell pepper, sliced
- 1 zucchini, sliced
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add the steak slices and cook until browned, about 3-4 minutes per side. Remove from the pan and set aside.
- In the same pan, add garlic and sauté for 30 seconds until fragrant.
- Add the orzo, beef broth, and balsamic vinegar to the pan. Stir to combine.
- Bring to a simmer, then reduce heat to medium. Cook for 8-10 minutes, stirring occasionally, until orzo is tender.
- Add the cherry tomatoes, bell pepper, and zucchini. Cook for an additional 5 minutes until vegetables are tender.
- Return the steak to the pan, stirring to combine. Cook for another 2 minutes to heat through.
- Season with salt and pepper, garnish with fresh basil, and serve hot.
