Ingredients
Scale
The key to this dish lies in selecting the right ingredients, ensuring they’re fresh and flavorful. As someone who appreciates simplicity, I always keep my pantry stocked with essentials. Here’s what you’ll need:
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 pound ground beef (or turkey for a lighter option)
- 1 packet taco seasoning
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 1 cup corn kernels (fresh, canned, or frozen)
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- Fresh cilantro and lime wedges for garnish
If you’re missing any of these, don’t fret! You can swap ground beef with chicken or even tofu for a vegetarian version.
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the onions and garlic, sautéing until the onions are translucent, about 3 minutes.
- Stir in the ground beef, cooking until browned. Drain excess fat if necessary.
- Mix in the taco seasoning, ensuring the meat is evenly coated.
- Add the rice, chicken broth, black beans, diced tomatoes, and corn to the pan. Stir to combine.
- Bring the mixture to a boil, then reduce heat to low. Cover and simmer for about 20 minutes, or until the rice is cooked and the liquid is absorbed.
- Remove from heat, sprinkle with cheddar cheese, and cover again until the cheese is melted, about 5 minutes.
- Garnish with fresh cilantro and lime wedges before serving.
