- 8 cups chicken broth
- 2 cups cooked chicken, shredded

- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/4 cup unsalted butter, melted
- 1 cup milk
- 1/4 cup fresh parsley, chopped
If you find yourself without one of these ingredients, don’t worry. You can substitute fresh herbs with dried ones or use vegetable broth instead of chicken broth. Remember, cooking at home is about making it work for you!
Instructions
- Heat the olive oil in a large pot over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes.
- Stir in the garlic, carrots, and celery. Cook for another 5 minutes, allowing the vegetables to soften slightly.
- Pour in the chicken broth and bring to a simmer. Add the shredded chicken, salt, and pepper. Let it simmer for 10 minutes.
- In a separate bowl, combine the flour, baking powder, and salt for the dumplings. Stir in the melted butter and milk until just combined.
- Drop tablespoons of the dumpling mixture into the simmering soup. Cover the pot and cook for an additional 15 minutes, or until the dumplings are cooked through.
- Stir in the fresh parsley just before serving.
Remember, the key here is to let the dumplings cook through completely. The steam will do most of the work for you, creating fluffy dumplings that are the star of the dish.
