Ingredients
Scale
Gather these ingredients, and you’re halfway to a delicious dinner:
- 1 tablespoon olive oil
- 1 pound smoked sausage, sliced
- 1 small onion, diced
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1/2 cup heavy cream
- 8 ounces penne pasta
- 1 teaspoon paprika
- 1/2 teaspoon red pepper flakes (optional for heat)
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 2 tablespoons chopped fresh parsley (for garnish)
If you’re missing an ingredient or two, don’t fret. Swap smoked sausage with any favorite sausage on hand, and try using canned tomatoes with chilies for an extra kick. This recipe is forgiving, much like our family dinners where improvisation was the secret ingredient.
Instructions
Follow these simple steps, and you’ll have dinner ready in a flash:
- Heat olive oil in a large pot over medium-high heat. Add sliced smoked sausage and cook until browned, about 5 minutes.
- Add diced onion and minced garlic to the pot. Sauté until the onion becomes translucent, roughly 3 minutes.
- Pour in the chicken broth, diced tomatoes, heavy cream, and pasta. Stir to combine, and bring the mixture to a boil.
- Reduce the heat to a simmer, cover, and cook for 10-12 minutes, or until the pasta is al dente, stirring occasionally.
- Stir in paprika, red pepper flakes, salt, and pepper. Mix in the shredded cheddar cheese until melted and creamy.
- Remove from heat and let the pasta sit for a couple of minutes to thicken. Sprinkle with fresh parsley before serving.
This dish reminds me of those spontaneous moments in the kitchen with my dad, where a little creativity and love turned simple ingredients into something memorable.
