Gather your ingredients, and let’s get cooking. Here’s what you’ll need:
- 2 cups of long-grain white rice
- 1 tablespoon of olive oil
- 1 medium onion, finely chopped
- 3 cloves of garlic, minced
- 2 cups of sliced button mushrooms
- 1/4 cup of soy sauce
- 3 cups of vegetable broth
- 1 teaspoon of sesame oil
- 2 green onions, sliced (optional, for garnish)
- Salt and pepper to taste
If you’re out of vegetable broth, chicken broth works just fine. You can also swap out button mushrooms for cremini or shiitake for a deeper flavor.
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes.
- Add the minced garlic and sliced mushrooms, cooking until the mushrooms are soft and browned, approximately 5 minutes.
- Stir in the rice, ensuring it’s well-coated in the oil and mushroom mixture. Cook for a minute or two to toast the rice slightly.
- Pour in the soy sauce and vegetable broth, stirring to combine. Bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the pot, and let it simmer for 18-20 minutes, or until the rice is tender and the liquid is absorbed.
- Remove the pot from heat, drizzle with sesame oil, and let it sit, covered, for another 5 minutes to steam.
- Fluff the rice with a fork, season with salt and pepper to taste, and garnish with sliced green onions if desired.
From my own kitchen experiments, I’ve found that letting the rice sit for those extra 5 minutes really helps the flavors meld together beautifully.
