Instructions
- Start by seasoning the thinly sliced chicken breasts with salt, pepper, smoked paprika, and onion powder. Set aside while you prepare the garlic butter sauce.
- In a medium skillet, heat the olive oil over medium heat. Add the seasoned chicken slices and cook until golden and cooked through, about 5-7 minutes. Stir occasionally to prevent sticking. Once cooked, transfer the chicken to a plate and wipe out the skillet.
- Lower the heat to medium-low, add the butter to the same skillet, and let it melt. Stir in the minced garlic and cook for 1-2 minutes until fragrant but not browned—this step always fills my kitchen with that cozy, “home” smell that reminds me of my dad’s cooking stories.
- Remove the skillet from heat and stir in the mayonnaise to the garlic butter, creating a creamy garlic sauce that will coat the chicken perfectly.
- Return the chicken to the skillet and toss it gently with the garlic sauce until well coated. This step is key for that ooey-gooey magic and helps the cheese stick better later on.
- Warm the flour tortillas in a dry skillet or microwave for about 15 seconds to make them pliable.
- Lay each tortilla flat and divide the garlic chicken evenly among them. Sprinkle a generous layer of mozzarella and cheddar cheese on top of the chicken mixture.
- Fold the sides of the tortilla in and roll tightly to form wraps. If you’re worried about them falling apart, you can secure them with a toothpick.
- Place the wraps seam-side down in the skillet over medium heat. Cook for 2-3 minutes on each side, pressing gently with a spatula, until the tortillas are crisp and golden and the cheese inside has melted into that irresistible gooeyness.
- Remove from skillet, let cool for a minute (if you can wait!), then garnish with chopped parsley or cilantro if desired.
