- 1 pound ground beef (or turkey for a lighter option)
- 1 packet taco seasoning (store-bought or homemade)
- 1 cup diced onions
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup salsa (your choice of heat level)
- 2 cups shredded cheddar cheese
- 10 taco shells
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
- Optional: sour cream, guacamole, diced tomatoes for topping
Instructions
- Preheat your oven to 375°F. Place taco shells in a 9×13 inch baking dish, standing them up, and set aside.
- In a large skillet over medium heat, cook the ground beef until browned, about 5-7 minutes. Drain excess fat.
- Add diced onions and taco seasoning to the beef. Stir to combine and cook for another 3 minutes until onions are soft.
- Mix in black beans and salsa, allowing the mixture to simmer for 5 minutes. Season with salt and pepper to taste.
- Spoon the beef mixture into each taco shell, filling them generously.
- Sprinkle shredded cheese over the filled tacos, ensuring each one is covered with a cheesy layer.
- Bake in the preheated oven for 10-12 minutes until the cheese is melted and bubbly.
- Remove from oven and garnish with chopped cilantro. Serve with optional toppings if desired.
