Instructions
- Peel the bananas and slice them diagonally into 1/2-inch thick pieces. The diagonal cut gives you more surface area for that beautiful caramelization.
- In a large skillet, melt the butter over medium heat. If you’re using coconut oil, let it melt completely but don’t let it brown.
- Add the brown sugar, cinnamon, and a pinch of salt to the melted butter. Stir gently until the sugar dissolves and the mixture becomes syrupy, about 1-2 minutes.
- Carefully place the banana slices in the pan in a single layer. Avoid overcrowding; cook in batches if necessary.
- Cook the bananas for 2-3 minutes on each side, or until they’re golden brown and caramelized. You’ll notice the edges start to crisp slightly—this is the magic moment.
- Right before flipping, drizzle the lemon juice over the bananas to add brightness and prevent them from getting too mushy.
- Once both sides are caramelized, remove the bananas from the pan and drizzle any remaining syrup over them.
- If you want to add vanilla extract, stir it into the syrup in the pan off the heat, then pour over the bananas for that extra depth of flavor.
