The key to this dish lies in selecting the right ingredients. Freshness is your best friend here, ensuring every bite bursts with flavor.
- 4 boneless, skinless chicken breasts
- 1 cup grated Parmesan cheese
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 2 tablespoons olive oil
- 2 cups heavy cream
- 1 cup chicken broth
- 3 cloves garlic, minced
- 1 cup grated mozzarella cheese
- Salt and pepper to taste
- Fresh parsley, chopped (optional for garnish)
Instructions
- Begin by flattening the chicken breasts slightly for even cooking. Season them with salt and pepper.
- Set up a dredging station with three shallow dishes: one with flour, one with beaten eggs, and one with Parmesan cheese.
- Dredge each chicken breast first in flour, then egg, and finally coat it with Parmesan cheese.
- Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook until golden brown on both sides, about 4-5 minutes per side. Remove and set aside.
- In the same skillet, reduce heat to medium and add garlic, sautéing until fragrant.
- Pour in the heavy cream and chicken broth, stirring to combine. Let it simmer for about 5 minutes until slightly thickened.
- Stir in mozzarella cheese until melted and smooth. Return the chicken to the skillet, spooning sauce over each piece.
- Allow everything to simmer together for another 5 minutes, letting the flavors meld beautifully.
- Garnish with fresh parsley before serving if desired.
