- 1 cup grated Parmesan cheese
- 1 cup Italian seasoned breadcrumbs

- 2 large eggs
- 2 tablespoons olive oil
If you’re missing Italian breadcrumbs, you can easily substitute with plain breadcrumbs and add a bit more oregano and garlic powder. Remember, home cooking is all about flexibility!

- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a shallow dish, combine the Parmesan cheese, breadcrumbs, garlic powder, oregano, salt, and pepper.
- In another dish, beat the eggs until smooth.
- Dip each chicken breast into the egg mixture, ensuring it’s well coated, and then press into the breadcrumb mixture, covering completely.
- Heat the olive oil in a large skillet over medium-high heat. Sear the chicken breasts for 2-3 minutes per side or until golden brown.
- Transfer the chicken to the prepared baking sheet and bake for 20-25 minutes, or until the chicken is cooked through and juices run clear.
A little tip from my kitchen: if you’re cooking with kids underfoot, get them involved. My little ones love helping with the breading process. It’s messy, but oh so fun!
