- 1 pound ground beef (or turkey for a lighter option)
- 1 cup cooked rice (white or brown)
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 can (14 ounces) diced tomatoes, drained
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese

Let’s get cooking! Follow these simple steps to bring the magic of Pepper Stuffing to your dinner table. Remember, home cooking is about love, not perfection, so don’t stress the small stuff.
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes. Place them in a baking dish, cut side up.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent, about 5 minutes.
- Add the ground beef to the skillet, cooking until browned and no longer pink. Drain any excess fat.
- Stir in the cooked rice, diced tomatoes, oregano, basil, salt, and pepper. Let the mixture simmer for 5 minutes.
- Spoon the beef and rice mixture into each bell pepper until generously filled. Top with shredded mozzarella cheese.
