- 1 1/2 pounds ground beef
- 1 cup shredded provolone cheese
- 1 small onion, finely chopped
- 1 green bell pepper, diced
- 1 cup breadcrumbs
- 2 large eggs
- 1 tablespoon Worcestershire sauce
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1/2 cup beef broth
Feel free to swap provolone with any melting cheese of your choice, like mozzarella, for a personal twist.
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan with a bit of olive oil.
- In a large skillet, heat olive oil over medium heat. Add onions and bell peppers, sautéing until they’re soft and aromatic, about 5 minutes. Let them cool slightly.
- In a large bowl, combine ground beef, sautéed vegetables, eggs, breadcrumbs, Worcestershire sauce, half of the cheese, salt, and pepper. Mix gently to combine.
- Transfer the mixture into the prepared loaf pan, pressing down gently. Pour beef broth over the top for added moisture.
- Bake in the preheated oven for 45 minutes. Sprinkle the remaining cheese on top and continue baking for an additional 10 minutes, or until the cheese is melted and bubbly.
- Remove from oven and let rest for 10 minutes before slicing. This helps the meatloaf hold its shape and lets the flavors meld beautifully.
