  • 4 potatoes, quartered
  • 2 cups beef broth
  • 1 cup red wine (optional, but elevates the flavor)
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves

If you don’t have red wine on hand, you can substitute it with an equal amount of beef broth. Feel free to swap out potatoes for parsnips or add in some mushrooms for an earthy twist.

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Season the beef chuck roast generously with salt and pepper.
  3. In a large Dutch oven over medium-high heat, warm the olive oil. Sear the roast on all sides until a rich brown crust forms, about 4-5 minutes per side.
  4. Remove the roast and set aside. In the same pot, add the garlic and onion, sautéing until the onion becomes translucent, approximately 3 minutes.
  5. Add the carrots and potatoes, stirring them together with the onions and garlic.
  6. Pour in the beef broth and red wine, if using. Stir in the tomato paste, thyme, rosemary, and bay leaves. Bring the mixture to a simmer.
  7. Return the roast to the pot, nestling it among the vegetables. Cover and transfer to the preheated oven.
  8. Bake for 3-4 hours, or until the meat is fork-tender and easily pulls apart.
  9. Remove from the oven and let it rest for about 10 minutes before serving. This allows the juices to redistribute, ensuring every bite is succulent.
