Instructions
- Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Increase the heat to medium-high, add the ground beef, and cook until browned, breaking it apart with a spatula, around 5-7 minutes.
- Stir in the diced potatoes, ensuring they are well coated with the beef juices.
- Cover the skillet and let the potatoes cook for about 10 minutes, stirring occasionally.
- Add the sliced zucchinis, paprika, salt, and pepper. Stir well to combine.
- Cover and cook for another 10-12 minutes, or until the potatoes and zucchinis are tender.
- If desired, sprinkle shredded cheese on top, allowing it to melt before serving.
