  • 1 and 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon pumpkin pie spice
  • 1 cup canned pumpkin puree
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips

Feel free to swap out the chocolate chips for nuts or dried fruits if you’re feeling adventurous. My little ones love helping me pour the chocolate chips into the bowl, and sometimes we end up with more in the batter than in the muffins!

Instructions

Let’s dive into the baking process! Follow these steps, and you’ll have a dozen warm muffins ready to enjoy.

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, baking soda, salt, and pumpkin pie spice. Set aside.
  3. In another bowl, combine the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Mix until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix, as this can make the muffins dense.
  5. Fold in the chocolate chips, distributing them evenly throughout the batter.
  6. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Allow the muffins to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
