Ingredients
Scale
Let’s keep things simple, shall we? Here’s what you’ll need to bring these cozy rolls to life:
- 3 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 packet (2 1/4 teaspoons) active dry yeast
- 1/2 cup warm milk
- 1/4 cup unsalted butter, melted
- 1/2 cup pumpkin puree
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon salt
- 1/2 cup brown sugar
- 2 teaspoons cinnamon
- 1/4 cup unsalted butter, softened (for filling)
- 1 cup powdered sugar
- 2 tablespoons cream cheese, softened
- 1 teaspoon vanilla extract
- 1–2 tablespoons milk (for icing)
If you’re like me and love playing around in the kitchen, feel free to swap in some whole wheat flour for a nuttier flavor or add a dash more cinnamon for that extra spice kick.
Instructions
Ready to get baking? Here’s how you can whip up these delightful rolls:
- In a small bowl, combine warm milk and yeast. Let it sit for about 5 minutes until it gets frothy.
- In a large mixing bowl, combine the flour, granulated sugar, pumpkin pie spice, and salt. Stir in the yeast mixture, melted butter, and pumpkin puree until a dough forms.
- Knead the dough on a floured surface for about 6-8 minutes, until it becomes smooth and elastic. If you’re baking with little ones, this is the perfect time to let them join in on the fun!
- Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm spot for about an hour, or until it doubles in size. Meanwhile, enjoy a moment of peace with a good book or a cup of tea.
- Preheat your oven to 350°F (175°C). Roll out the dough into a large rectangle, about 1/4 inch thick.
- Spread the softened butter over the dough, then sprinkle with brown sugar and cinnamon. Roll up the dough tightly from the long side and cut into 12 equal rolls.
- Place the rolls in a greased baking dish, cover them with a cloth, and let them rise for another 30 minutes.
- Bake for 25-30 minutes, or until golden brown and your kitchen smells like a pumpkin spice wonderland.
- While the rolls are baking, prepare the icing by whisking together powdered sugar, cream cheese, vanilla, and milk until smooth.
- Once the rolls are out of the oven, let them cool for a few minutes before drizzling with icing.
Remember, home cooking is about love, not perfection. So if your rolls aren’t uniform, or if you sneak a taste of the icing before it’s time, that’s perfectly okay!
