Ingredients
Scale
The key to this delightful cake lies in selecting the right ingredients, much like my mom used to do with her pantry magic. Here’s what you’ll need:
- 2 ½ cups all-purpose flour
- 1 ½ cups granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 tablespoon cocoa powder
- 1 ½ cups buttermilk
- ½ cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon white vinegar
- 1 tablespoon purple food coloring
Feel free to substitute buttermilk with a mix of milk and lemon juice if needed, or experiment with natural food coloring for a healthier spin.
Instructions
- Preheat your oven to 350°F. Grease and flour two 9-inch round cake pans.
- In a large bowl, sift together the flour, sugar, baking powder, baking soda, salt, and cocoa powder.
- In another bowl, whisk together the buttermilk, butter, eggs, vanilla extract, vinegar, and purple food coloring until smooth.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Avoid overmixing to keep the cake tender.
- Divide the batter evenly between the prepared cake pans.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for about 10 minutes, then transfer them to a wire rack to cool completely before frosting.
