- 2 pounds pork belly, cut into 1-inch cubes

- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder

- 1 tablespoon apple cider vinegar
- 1/2 teaspoon chili flakes (optional for a bit of heat)
If you don’t have apple cider vinegar, white vinegar works in a pinch. And if you’re out of smoked paprika, regular paprika with a dash of cumin can do the trick.
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.
- In a large bowl, combine the soy sauce, brown sugar, smoked paprika, garlic powder, black pepper, olive oil, and apple cider vinegar. Stir until the sugar dissolves and the mixture is well combined.
- Add the pork belly cubes to the marinade, ensuring each piece is well coated. Let it sit for about 10 minutes to absorb the flavors.
- Spread the pork belly cubes on the prepared baking sheet in a single layer, making sure they don’t touch each other. This allows them to crisp up nicely.
- Bake in the preheated oven for 25-30 minutes, turning halfway through, until the pork is crispy and caramelized. You’ll know they’re ready when they have a deep golden brown color and the edges are slightly charred.
- If you like a bit of heat, sprinkle the chili flakes over the pork belly in the last 5 minutes of cooking.
