- 4 tilapia fillets
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 can (14 ounces) roasted red peppers, drained and chopped
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup vegetable broth
- 2 tablespoons heavy cream (optional)
- Fresh parsley, chopped, for garnish
Instructions
- Heat a tablespoon of olive oil in a large skillet over medium heat. Season the tilapia fillets with salt and pepper.
- Cook the tilapia fillets for 3-4 minutes on each side until they’re golden and cooked through. Remove them from the skillet and set aside.
- In the same skillet, add the remaining olive oil and sauté the onions until they’re soft and translucent, about 5 minutes.
- Add the garlic and cook for another minute, until fragrant.
- Stir in the chopped roasted red peppers and smoked paprika. Cook for 2-3 minutes, allowing the flavors to meld.
- Pour in the vegetable broth and bring the mixture to a simmer. If you’re feeling a little indulgent, add the heavy cream now for a richer sauce.
- Return the tilapia fillets to the skillet, spooning the sauce over them. Let everything simmer together for another 2-3 minutes.
- Garnish with fresh parsley before serving.
