  • 4 tilapia fillets
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (14 ounces) roasted red peppers, drained and chopped
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup vegetable broth
  • 2 tablespoons heavy cream (optional)
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat a tablespoon of olive oil in a large skillet over medium heat. Season the tilapia fillets with salt and pepper.
  2. Cook the tilapia fillets for 3-4 minutes on each side until they’re golden and cooked through. Remove them from the skillet and set aside.
  3. In the same skillet, add the remaining olive oil and sauté the onions until they’re soft and translucent, about 5 minutes.
  4. Add the garlic and cook for another minute, until fragrant.
  5. Stir in the chopped roasted red peppers and smoked paprika. Cook for 2-3 minutes, allowing the flavors to meld.
  6. Pour in the vegetable broth and bring the mixture to a simmer. If you’re feeling a little indulgent, add the heavy cream now for a richer sauce.
  7. Return the tilapia fillets to the skillet, spooning the sauce over them. Let everything simmer together for another 2-3 minutes.
  8. Garnish with fresh parsley before serving.
