The key to this dish lies in selecting the right ingredients that are fresh and full of flavor. Simple and straightforward, this recipe relies on the quality of its components, much like how my mom could create wonders with just a few pantry staples.
- 1 pound of fresh carrots, peeled and cut into sticks
- 2 tablespoons olive oil
- 1 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
- 1 cup ricotta cheese
- 1 tablespoon honey
- 1 tablespoon lemon juice
- 1 teaspoon fresh thyme leaves
- Optional: a pinch of chili flakes for a bit of heat
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Toss the carrot sticks in olive oil, sea salt, and black pepper until evenly coated, then spread them out on the prepared baking sheet.
- Roast the carrots in the preheated oven for 20-25 minutes, or until they are tender and slightly caramelized around the edges.
- While the carrots are roasting, combine the ricotta cheese, honey, and lemon juice in a bowl. Use a hand mixer to whip the mixture until it’s light and fluffy.
- Once the carrots are done, remove them from the oven and let them cool slightly.
- To serve, spread the whipped ricotta on a serving platter and arrange the roasted carrots on top. Garnish with fresh thyme leaves and a sprinkle of chili flakes if desired.
