- 1 lb canned salmon, drained and flaked
- 1/2 cup breadcrumbs (or crushed crackers for a gluten-free option)
- 1/4 cup finely chopped onion
- 1/4 cup chopped parsley
- 2 large eggs, beaten
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 2 tablespoons olive oil (for frying)
For the Creamy Lemon Garlic Sauce:
- 1/2 cup plain Greek yogurt (or sour cream)
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- In a large bowl, combine the canned salmon, breadcrumbs, onion, parsley, eggs, lemon juice, Dijon mustard, garlic powder, salt, and pepper. Mix until everything is well incorporated.
- Form the mixture into patties, about the size of your palm. I usually get around 6-8 patties from this recipe.
- Heat olive oil in a large skillet over medium heat. Once the oil is hot, add the patties. Cook for about 4-5 minutes on each side, or until they are golden brown and crispy. Remember, that a good sear locks in flavor!
- While the patties are cooking, whisk together the Greek yogurt, lemon juice, minced garlic, salt, and pepper in a small bowl to create the creamy sauce.
- Once the patties are done, let them rest on a paper towel-lined plate to absorb any excess oil.
- Serve the salmon patties warm, topped with a generous dollop of the creamy lemon garlic sauce. Enjoy the blend of textures and flavors with every bite!
