  • 1.5 pounds baby potatoes, halved or quartered if large (Yukon Gold or red potatoes are perfect)
  • 1 medium red bell pepper, chopped
  • 1 medium yellow onion, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Substitution tips: If you don’t have smoked sausage, chorizo or bratwurst make excellent alternatives. For potatoes, sweet potatoes add a lovely sweetness and color contrast. And if you’re out of fresh garlic, 1/2 teaspoon garlic powder works in a pinch.

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with foil or parchment paper for easy cleanup.
  2. In a large bowl, toss the halved baby potatoes with olive oil, smoked paprika, dried thyme, salt, and pepper. Make sure every piece is coated well—this is where the flavor really starts to build.
  3. Lay out four large sheets of heavy-duty aluminum foil, about 12 inches square each. Divide the potatoes evenly among the foil sheets, placing them in the center of each.
  4. Top the potatoes with the sliced sausage, chopped bell pepper, sliced onion, and minced garlic. Don’t be shy—pile it on. The foil packet method traps all those juices and flavors together.
  5. Fold the foil over the ingredients and seal the edges tightly, creating a packet. You want it sealed enough so steam doesn’t escape but leave some room inside for air to circulate.
  6. Place the packets on your prepared baking sheet and bake for 30-35 minutes, or until the potatoes are tender when pierced with a fork and the sausage is cooked through.
  7. Carefully open one packet (steam will be hot!) and check the doneness. If the potatoes need a little more time, reseal and bake for another 5-10 minutes.
  8. Once ready, sprinkle with fresh parsley if you like, and serve straight from the foil packets for that cozy, rustic feel.
