- Start by heating your vegetable oil in a deep pot or fryer to 350°F. You want enough oil for frying, about 3-4 inches deep.
- In a large mixing bowl, combine the cornmeal, flour, sugar, baking powder, salt, and Cajun seasoning. Stir until well mixed.
- In another bowl, whisk together the buttermilk and egg until smooth. Add this mixture to the dry ingredients, stirring until just combined. Be careful not to overmix; a few lumps are okay!
