  • 1 sheet puff pastry, thawed
  • 2 tablespoons olive oil
  • 1 pound mushrooms, sliced (button or cremini work great)
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • 1/2 cup heavy cream
  • 1 cup Gruyère cheese, shredded
  • Salt and pepper to taste
  • 1 egg, beaten (for egg wash)

If you can’t find Gruyère, feel free to substitute with Swiss cheese for a similar flavor. And if thyme isn’t your thing, rosemary makes a lovely alternative.

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large skillet, heat olive oil over medium heat. Add mushrooms and sauté until they release their moisture and turn golden brown, about 8-10 minutes.
  3. Add garlic and thyme to the mushrooms and cook for another minute until fragrant.
  4. Pour in the heavy cream, stirring until it thickens slightly. Season with salt and pepper. Remove from heat and let cool slightly.
  5. Roll out the puff pastry on a floured surface and cut into desired shapes or sizes.
  6. Place a spoonful of the mushroom mixture onto the center of each pastry square and top with shredded Gruyère.
  7. Fold the pastry over the filling and seal the edges by pressing them with a fork. Brush the tops with beaten egg for a golden finish.
  8. Bake in the preheated oven for 15-20 minutes or until the pastry is puffed and golden brown.
