- 1 sheet puff pastry, thawed
- 2 tablespoons olive oil
- 1 pound mushrooms, sliced (button or cremini work great)
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme leaves
- 1/2 cup heavy cream
- 1 cup Gruyère cheese, shredded
- Salt and pepper to taste
- 1 egg, beaten (for egg wash)
If you can’t find Gruyère, feel free to substitute with Swiss cheese for a similar flavor. And if thyme isn’t your thing, rosemary makes a lovely alternative.
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large skillet, heat olive oil over medium heat. Add mushrooms and sauté until they release their moisture and turn golden brown, about 8-10 minutes.
- Add garlic and thyme to the mushrooms and cook for another minute until fragrant.
- Pour in the heavy cream, stirring until it thickens slightly. Season with salt and pepper. Remove from heat and let cool slightly.
- Roll out the puff pastry on a floured surface and cut into desired shapes or sizes.
- Place a spoonful of the mushroom mixture onto the center of each pastry square and top with shredded Gruyère.
- Fold the pastry over the filling and seal the edges by pressing them with a fork. Brush the tops with beaten egg for a golden finish.
- Bake in the preheated oven for 15-20 minutes or until the pastry is puffed and golden brown.
