- Bring a large pot of salted water to a boil. Cook the angel hair pasta according to package instructions until al dente, about 4 minutes. Drain and set aside.
- While the pasta cooks, pat the sea scallops dry with paper towels. Season them with salt and pepper on both sides.
- In a large skillet, heat the olive oil over medium-high heat. Once the oil is shimmering, add the scallops in a single layer. Sear for 2-3 minutes on each side until they are golden brown and cooked through. Remove the scallops from the skillet and set aside.
- In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Be careful not to burn it.
- Pour in the white wine (or chicken broth) and lemon juice, scraping up any bits from the bottom of the pan. Let it simmer for 1-2 minutes until slightly reduced.
- Add the cooked pasta to the skillet, tossing to coat it with the sauce. Stir in the Parmesan cheese, allowing it to melt and create a creamy coating.
- Return the scallops to the skillet, gently tossing them with the pasta to combine. Garnish with fresh parsley before serving.
