Sheet Pan Pork Chops and Potatoes: A One-Pan Wonder for Weeknight Dinners

Learn how to make delicious Sheet Pan Pork Chops and Potatoes. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

  • 4 bone-in pork chops (about 1 inch thick)
  • 1.5 pounds baby potatoes, halved
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 2 teaspoons garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Feel free to swap baby potatoes for sweet potatoes if you’re in the mood for a sweeter twist. And if you’re out of balsamic vinegar, a splash of lemon juice will add a lovely tang.

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy clean-up.
  2. In a large bowl, toss the halved potatoes with 1 tablespoon of olive oil, garlic powder, thyme, rosemary, salt, and pepper. Spread them out in a single layer on one side of the prepared baking sheet.
  3. Drizzle the remaining olive oil and balsamic vinegar over the pork chops. Season both sides with salt and pepper. Place them on the other side of the baking sheet.
  4. Roast in the oven for about 25-30 minutes, or until the pork chops are cooked through and the potatoes are golden and tender. An internal temperature of 145°F (63°C) indicates the pork is done.
  5. If you want a bit more color, broil for an additional 2-3 minutes at the end.
  6. Garnish with freshly chopped parsley before serving, if desired.

Remember, cooking is as much about intuition as it is about precision. Don’t be afraid to adjust the spices to suit your family’s taste buds. My mom always said a dash of creativity can make any dish your own.
