  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 bag frozen tater tots

You can substitute the cheddar cheese with mozzarella for a milder flavor or add some spice with pepper jack cheese. If you’re out of green onions, diced yellow onions work just as well and add a bit of sweetness to the dish.

Instructions

  1. Preheat your oven to 375°F. While it’s heating up, take a moment to breathe and relax, maybe even sneak a taste of the cheese—chef’s privilege!
  2. In a large skillet over medium heat, add the olive oil and sauté the shrimp with garlic powder, paprika, salt, and pepper. Cook until the shrimp are pink and cooked through, about 4-5 minutes. Remove from the skillet and set aside.
  3. In the same skillet, add the cooked grits, heavy cream, and cheddar cheese. Stir until the cheese is melted and the mixture is creamy and smooth. Add the green onions and the cooked shrimp back into the skillet, mixing everything together.
  4. Transfer the shrimp and grit mixture into a baking dish, spreading it out evenly.
  5. Arrange the frozen tater tots on top of the shrimp and grit mixture in an even layer.
  6. Bake in the preheated oven for 25-30 minutes, or until the tater tots are golden brown and crispy.
  7. Once baked, let the pie cool for a few minutes before serving. This is always the hardest part for my kids, as the smell fills the kitchen and their patience wears thin!
