- 1 cup long-grain white rice
- 1 tablespoon olive oil
- 1/2 pound smoked sausage, sliced
- 1/2 pound shrimp, peeled and deveined
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper (optional, for those who like it hot)
- 2 cups chicken broth
- Salt and pepper to taste
- 2 green onions, chopped (for garnish)
If you’re out of Cajun seasoning, a mix of paprika, garlic powder, and onion powder will do the trick. And if you’re feeling adventurous, throw in some celery for that extra crunch.
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the sliced sausage and cook until browned, about 5 minutes. Remove and set aside.
- In the same skillet, add the chopped onion and bell pepper. Sauté until the onion is translucent, about 3 minutes.
- Add the minced garlic, Cajun seasoning, paprika, and cayenne pepper. Stir for about 1 minute until fragrant.
- Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Bring to a simmer.
- Stir in the rice, return the sausage to the skillet, and cover. Cook on low heat for about 15-18 minutes, until the rice is tender and has absorbed most of the liquid.
- Add the shrimp to the skillet, nestling them into the rice. Cover and cook until the shrimp are pink and cooked through, about 5 minutes.
- Fluff the rice with a fork, season with salt and pepper, and garnish with chopped green onions before serving.
Pro tip: Use the time while the rice is cooking to clean up, or better yet, sip a glass of wine. You’ve earned it!
