  • 1 pound shrimp, peeled and deveined
  • 1 pound smoked sausage, sliced into 1/4-inch rounds
  • 2 cups long-grain white rice
  • 4 cups chicken broth
  • 1 medium onion, diced
  • 1 bell pepper (red or green), chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (optional for a little heat)
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 2 green onions, sliced for garnish

If you’re missing an ingredient, don’t fret. You can substitute smoked sausage with chicken sausage for a different take. And if you don’t have chicken broth, water with a bouillon cube works in a pinch. Remember, flexibility is the essence of home cooking.

Instructions

  1. Heat the olive oil in a large skillet or pot over medium heat. Add the sliced sausage and cook until browned, about 5 minutes.
  2. Remove the sausage from the skillet and set aside. In the same skillet, add the diced onion and chopped bell pepper. Cook until the onion is translucent, about 3-4 minutes.
  3. Add the minced garlic, paprika, cayenne pepper, salt, and black pepper. Stir for about a minute until fragrant.
  4. Stir in the rice and let it cook for a couple of minutes, allowing it to absorb the flavors.
  5. Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 15-20 minutes or until the rice is cooked and the liquid is absorbed.
  6. Add the shrimp on top of the rice, cover again, and cook for another 5 minutes or until the shrimp are pink and cooked through.
  7. Return the sausage to the skillet, gently stir it into the rice mixture, and let everything heat through for about 2-3 minutes.
  8. Garnish with sliced green onions before serving.
