Gather these simple ingredients, and you’re halfway to a meal that feels like a big, warm hug.
- 1 pound shrimp, peeled and deveined
- 1 pound smoked sausage, sliced into 1/4-inch rounds
- 2 cups long-grain white rice
- 4 cups chicken broth
- 1 medium onion, diced
- 1 bell pepper (red or green), chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper (optional for a little heat)
- Salt and black pepper to taste
- 2 tablespoons olive oil
- 2 green onions, sliced for garnish
If you’re missing an ingredient, don’t fret. You can substitute smoked sausage with chicken sausage for a different take. And if you don’t have chicken broth, water with a bouillon cube works in a pinch. Remember, flexibility is the essence of home cooking.
Instructions
- Heat the olive oil in a large skillet or pot over medium heat. Add the sliced sausage and cook until browned, about 5 minutes.
- Remove the sausage from the skillet and set aside. In the same skillet, add the diced onion and chopped bell pepper. Cook until the onion is translucent, about 3-4 minutes.
- Add the minced garlic, paprika, cayenne pepper, salt, and black pepper. Stir for about a minute until fragrant.
- Stir in the rice and let it cook for a couple of minutes, allowing it to absorb the flavors.
- Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 15-20 minutes or until the rice is cooked and the liquid is absorbed.
- Add the shrimp on top of the rice, cover again, and cook for another 5 minutes or until the shrimp are pink and cooked through.
- Return the sausage to the skillet, gently stir it into the rice mixture, and let everything heat through for about 2-3 minutes.
- Garnish with sliced green onions before serving.
