The key to this dish lies in selecting the right ingredients—fresh and simple, just like my mom would choose.
- 1 pound shrimp, peeled and deveined
- 8 ounces noodles (your choice of soba, rice noodles, or spaghetti)
- 2 tablespoons vegetable oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup broccoli florets
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1/4 cup soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon sesame oil
- 1 teaspoon chili flakes (optional)
- 2 green onions, chopped
Instructions
- Cook the noodles according to the package instructions. Drain and set aside.
- In a large pan or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove and set aside.
- Add the remaining tablespoon of oil to the pan. Toss in the garlic and ginger, stirring for about 30 seconds until fragrant.
- Add the bell peppers and broccoli, stirring frequently, and cook for about 4-5 minutes until the veggies are tender-crisp.
- Return the shrimp to the pan, add the cooked noodles, soy sauce, oyster sauce, sesame oil, and chili flakes if using. Toss everything together until well combined and heated through, about 2 minutes.
- Sprinkle with chopped green onions before serving.
