- 1/2 pound ground pork
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 2 cloves garlic, minced
- 1/2 cup milk
- 2 large eggs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried oregano
- 1/4 teaspoon crushed red pepper flakes (optional for a bit of heat)
- 1/2 cup tomato sauce
- 1/4 cup pine nuts (optional for added texture)
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, Parmesan cheese, and parsley.
- Add the minced garlic, milk, eggs, salt, black pepper, oregano, and crushed red pepper flakes. Mix everything thoroughly using your hands. Remember, messy hands mean you’re on the right track!
- Mold the meat mixture into a loaf shape and place it on the prepared baking sheet. If using, sprinkle the top with pine nuts for a delicious crunch.
- Spread the tomato sauce evenly over the top of the meatloaf. This is where my mom’s magic touch would make its mark, turning simple tomato sauce into a flavorful glaze.
- Bake in the preheated oven for 50-60 minutes, or until the internal temperature reaches 160°F (71°C). The aroma will fill your kitchen, just like those evenings in my childhood home.
- Let the meatloaf rest for about 10 minutes before slicing. This allows the juices to redistribute, ensuring each slice is tender and flavorful.
