  • 2 tablespoons soy sauce
  • 1 tablespoon gochujang (Korean chili paste)
  • 2 teaspoons sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 egg, beaten
  • 1/2 cup breadcrumbs
  • Salt and pepper, to taste
  • 4 burger buns
  • 1 cup kimchi, chopped
  • 1/2 cup sliced cucumber
  • 2 tablespoons mayonnaise
  • 1 tablespoon sriracha

Feel free to substitute ground chicken with turkey for a leaner option. If gochujang is hard to find, a mix of hot sauce and a bit of sugar can work in a pinch.

Instructions

  1. In a large mixing bowl, combine the ground chicken, soy sauce, gochujang, sesame oil, garlic, ginger, beaten egg, breadcrumbs, salt, and pepper. Mix until everything is well incorporated.
  2. Shape the mixture into four patties. Tip: Rubbing a little oil on your hands can prevent sticking.
  3. Heat a non-stick skillet over medium heat. Once hot, add the patties and cook for about 5-6 minutes on each side, or until the internal temperature reaches 165°F. They should be golden brown and slightly crispy on the outside.
  4. While the patties are sizzling, mix mayonnaise and sriracha in a small bowl to create a spicy sauce.
  5. Toast the burger buns in the same skillet for about a minute until lightly golden.
  6. Assemble the burger by spreading the spicy sauce on the bottom bun, adding the chicken patty, a generous spoonful of kimchi, sliced cucumber, and finally the top bun.
