No need for an extravagant grocery list here. You might already have most of these items in your pantry:
- 1 pound ground chicken
- 2 tablespoons soy sauce
- 1 tablespoon gochujang (Korean chili paste)
- 2 teaspoons sesame oil
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 egg, beaten
- 1/2 cup breadcrumbs
- Salt and pepper, to taste
- 4 burger buns
- 1 cup kimchi, chopped
- 1/2 cup sliced cucumber
- 2 tablespoons mayonnaise
- 1 tablespoon sriracha
Feel free to substitute ground chicken with turkey for a leaner option. If gochujang is hard to find, a mix of hot sauce and a bit of sugar can work in a pinch.
Instructions
- In a large mixing bowl, combine the ground chicken, soy sauce, gochujang, sesame oil, garlic, ginger, beaten egg, breadcrumbs, salt, and pepper. Mix until everything is well incorporated.
- Shape the mixture into four patties. Tip: Rubbing a little oil on your hands can prevent sticking.
- Heat a non-stick skillet over medium heat. Once hot, add the patties and cook for about 5-6 minutes on each side, or until the internal temperature reaches 165°F. They should be golden brown and slightly crispy on the outside.
- While the patties are sizzling, mix mayonnaise and sriracha in a small bowl to create a spicy sauce.
- Toast the burger buns in the same skillet for about a minute until lightly golden.
- Assemble the burger by spreading the spicy sauce on the bottom bun, adding the chicken patty, a generous spoonful of kimchi, sliced cucumber, and finally the top bun.
