  • 1 tablespoon olive oil
  • 1 pound beef sirloin, thinly sliced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 1 teaspoon paprika
  • 1/2 cup beef broth
  • 1 cup sour cream
  • 1 tablespoon Worcestershire sauce
  • 1 package (9 ounces) cheese tortellini
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Feel free to substitute the beef with chicken or even mushrooms for a vegetarian twist. If sour cream isn’t your thing, a splash of heavy cream works beautifully too.

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add the sliced beef and season with salt and pepper. Cook until browned, about 5 minutes. Remove the beef from the skillet and set aside.
  2. In the same skillet, add the chopped onion and garlic. Sauté until the onion becomes translucent.
  3. Add mushrooms to the skillet and cook until they are soft and golden brown.
  4. Sprinkle paprika over the mushroom mixture and stir to combine.
  5. Pour in the beef broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
  6. Reduce the heat to low and stir in the sour cream and Worcestershire sauce. Allow the sauce to thicken slightly.
  7. Return the beef to the skillet along with the tortellini. Stir well to coat everything in the creamy sauce. Cook until the tortellini is heated through, about 5 minutes.
  8. Garnish with fresh parsley and serve hot. Enjoy the meal with your loved ones!
