- 1 tablespoon olive oil
- 1 pound beef sirloin, thinly sliced
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 1 teaspoon paprika
- 1/2 cup beef broth
- 1 cup sour cream
- 1 tablespoon Worcestershire sauce
- 1 package (9 ounces) cheese tortellini
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
Feel free to substitute the beef with chicken or even mushrooms for a vegetarian twist. If sour cream isn’t your thing, a splash of heavy cream works beautifully too.
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add the sliced beef and season with salt and pepper. Cook until browned, about 5 minutes. Remove the beef from the skillet and set aside.
- In the same skillet, add the chopped onion and garlic. Sauté until the onion becomes translucent.
- Add mushrooms to the skillet and cook until they are soft and golden brown.
- Sprinkle paprika over the mushroom mixture and stir to combine.
- Pour in the beef broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
- Reduce the heat to low and stir in the sour cream and Worcestershire sauce. Allow the sauce to thicken slightly.
- Return the beef to the skillet along with the tortellini. Stir well to coat everything in the creamy sauce. Cook until the tortellini is heated through, about 5 minutes.
- Garnish with fresh parsley and serve hot. Enjoy the meal with your loved ones!
