- 4 bone-in pork chops (about 1-inch thick)
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)
If you’re out of heavy cream, half-and-half works as a great substitute. For a lighter version, consider using Greek yogurt in place of some of the cream.
Instructions
- Heat the olive oil in a skillet over medium-high heat. Season the pork chops with salt and pepper, and brown them on each side for about 3-4 minutes. Transfer to the slow cooker.
- In the same skillet, add the minced garlic and sauté until fragrant, about 1 minute.
- Pour in the chicken broth and cream, stirring to combine. Bring to a gentle simmer.
- Stir in the Parmesan cheese and thyme, allowing the cheese to melt into the sauce.
- Pour the sauce over the pork chops in the slow cooker. Cover and cook on low for 6-7 hours, or until the pork is tender.
- If you prefer a thicker sauce, stir in the cornstarch mixture during the last 30 minutes of cooking.
