- 1 pound smoked sausage, sliced
- 2 pounds potatoes, diced (I love using russet or Yukon gold for this!)
- 1 large onion, chopped
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 2 tablespoons chopped fresh parsley (optional, for garnish)
Don’t have smoked sausage? Feel free to swap in kielbasa or even andouille for a spicier kick. And if you’re out of cheddar, any melting cheese you have on hand will work just fine.
Instructions
- Preheat your oven to 400°F. This ensures everything bakes evenly and gets that nice golden finish.
- In a large mixing bowl, toss the diced potatoes, sliced sausage, and chopped onion with the olive oil, garlic powder, paprika, salt, and pepper. Make sure everything is well-coated.
- Spread the mixture evenly in a large baking dish. My go-to is a 9×13-inch dish, which fits everything perfectly without overcrowding.
- Bake in the preheated oven for 40-45 minutes, stirring halfway through. You’ll know it’s ready when the potatoes are tender and the edges are a beautiful golden brown.
- Sprinkle the shredded cheddar cheese over the top and return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
- Remove from oven and let it cool for a few minutes. Sprinkle with fresh parsley if using, then serve piping hot.
