Instructions

  1. Start by washing your baby potatoes and slicing them in half. This helps them cook faster and soak up all those smoky flavors.
  2. Heat the olive oil in a large skillet over medium heat. I like using cast iron for the best sear, but any heavy-bottomed pan works.
  3. Add the potatoes cut-side down and cook for about 10 minutes without stirring. You want them to get golden and crispy on one side.
