Instructions
Follow these steps to bring this comforting soup to life:
- Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sliced mushrooms to the pot. Cook for an additional 3 minutes, stirring occasionally, until the mushrooms begin to soften.
- Pour in the vegetable broth and water. Stir in the soy sauce and grated ginger. Bring the mixture to a gentle simmer.
- Add the chopped bok choy to the pot and simmer for another 5 minutes until the bok choy is tender but still vibrant.
- Finish with a drizzle of sesame oil, and season with salt, pepper, and optional chili flakes to taste.
- Serve hot, garnished with fresh herbs if desired.
